There's a reason people are queued outside Sosin Isso (소신이쏘) before the dinner shift even starts. This Sinchon restaurant does one thing — braised short ribs in a rich, spicy sauce — and it does it well enough that locals keep returning for it.
What to Expect
Galbijjim is a Korean braised beef short rib dish. Traditionally it's sweet and savory, slow-cooked until the meat falls off the bone. Sosin Isso does a version that throws a curveball: you can get it in a creamy sauce that lands somewhere between a rich stew and a light curry. It's warming and a little unusual, even for Koreans.
You pick your spice level from 1 to 5. Level 2 is genuinely spicy — not decorative spicy — so if your heat tolerance is modest, start at 1. The cream version softens the burn a bit, but don't let the word "cream" fool you into ordering a 4.
The pot comes loaded with glass noodles (dangmyeon), rice cakes (tteok), cabbage, and mushrooms alongside the beef. Best part: free refills on the noodles and rice cakes. The meat is the expensive bit, so make those refills count.

Cream Galbijjim — This is the reason you came. Tender short ribs in a creamy, mildly spicy sauce with glass noodles and rice cakes. Order it at spice level 2 if you can handle some heat, level 1 if you're cautious. Don't skip the noodle refills.
Egg Soufflé (gyeran jjim) — Steamed egg that comes out puffed up like a cloud. It's delicate and slightly sweet, which balances the spice of the ribs nicely. Practical move: eat it fast, it deflates.
Corn Cheese — Yes, it sounds like a side dish from a school cafeteria. It isn't. Sweet corn, melted cheese, slightly caramelized on top. Nearly everyone orders it and nearly everyone finishes it. Get it.

It's a casual dinner spot in a university neighborhood — Yonsei University is a short walk away, so the crowd skews young. Lively, a little loud, not precious about anything. It's the kind of place where you're sharing dishes in the middle of the table and probably ordering another round of something.
It's not a romantic dinner spot. It's where you go with three friends, order too much, and leave smelling like braised meat. That's the correct experience.
The wait can be real. Locals show up 10 to 15 minutes before the dinner shift opens at 5 PM to beat the queue. By the time they open the doors, there can easily be 20 people behind you.

Closing Tip
Come right at 5 PM for dinner — not 5:15, not 5:30. The queue builds fast and there's no reservation system, so timing is everything. If you're coming from Hongdae, the walk takes about 13 minutes, so factor that in.

"Such an incredible meal we found in Sinchon! This place gets super popular during peak lunch and dinner hours, so we came right around when it reopened for dinner, and the queue was very short. The waiters were all very helpful and welcoming. We got the cream galbijjim, which was filled with such tender meat and delicious glass noodles and rice cakes. There are 5 levels of spice to choose from, and we chose 2, which had the perfect kick. The soup was so creamy and flavorful, and you can even get unlimited refills on the noodles and rice cakes. We also ordered the egg soufflé, corn cheese, and rice, which were all amazing. I highly recommend trying this incredible restaurant!"
